+ 2 heads organic cauliflower (preferably different colors like green and purple)
+ 2 large organic heirloom tomatoes
+ 1 bunch organic green onions
+ 1/2 organic red onion
+ 1 bundle organic cilantro
+ 1 cup chopped (organic) coconut meat
+ 2 large organic jalapeƱos (or a milder pepper of your choice for flavor)
+ 6-8 limes (depending on how tart you like it- I like LOTS of lime!)
+ pink himalayan sea salt
+organic black cracked pepper
+ ** optional organic turmeric
***This is one of the world’s EASIEST, HEALTHIEST RECIPES EVER! All you have to do is buy organic, chop, squeeze and mix. Perfect for your Valentine’s evening date, lunch on the go, or as a light, low calorie dinner option.
Chop your cauliflower, tomatoes, onions, jalapeƱos (sans seeds) and coconut meat into small pieces and place everything into a large mixing bowl. Squeeze your limes and add the juice to your mixing bowl. Next add a pinch of himalayan pink sea salt and lots of cracked black pepper! If you’re feeling any inflammation, I highly recommend you add a bit of turmeric powder to help. Trust me, it tastes great! Stir and let sit for about 20 minutes. The longer it sits, the more the veggies will soak up the lime flavor.
Chill if you want it super cold.
Serve on a large piece of lettuce or with large slices of cucumber and carrot as gluten free dipping options. If you’re feeling like you need some bread, try a few slices of sourdough or some organic, blue corn tortilla chips.
You can also add olive oil if you want the extra flavor and “dressing” in your ceviche. It does add extra calories though so be careful not to over do it!
