My sweet pepper recipe is super simple, easy and delicious! OH and of course super healthy!! I served this at my sister’s baby shower (I hosted) and no one even knew it was vegan cream cheese!
+ 10 small sweet peppers (multi colors preferred for a nicer presentation look)
+ 1 package vegan cream cheese (Whole Foods has some awesome options)
+ 1 bundle fresh mint
+ extra virgin olive oil
Start by thoroughly washing all the peppers. Cut all the tops off. Use a dull knife to scrape out the seeds and clean the inside of each pepper. Place a mint leaf in each pepper then add vegan cream cheese with your choice of a dull knife or mini spoon (I think the knife is easier).
For a party, grab a nice party platter and arrange the peppers in rows of a circle, as I have done above. Place any excess vegan cream cheese in the center of the peppers and decorate with mint leaves. Drizzle extra Virginia olive oil over the excess vegan cream cheese. Serve and enjoy!
