Hummus is one of my favorite vegan dishes! Served with radishes, celery and colorful carrots, you can’t go wrong. Super healthy, delicious and easy to make, I serve hummus as an appetizer for dinner parties and on our salads instead of dressing (Anton’s obsessed lol).
Here’s how I make hummus:
+ 2 cans organic garbanzo beans (water included)
+ 1/2 cup organic lemon juice
+ cumin spice (as much or as little as you like for flavor- I sprinkle a tablespoon or two)
+ 2/3 cup tahini paste
+ 2 cloves chopped garlic
+ 1/2 teaspoon sea salt
*** Add everything but the salt into your vitamix or food processor. Blend for about 30 seconds then stir with a long spoon and add the sea salt. Blend for another 30 seconds. If the mixture is a bit thick, add up to a 1/4 cup of olive oil and blend. Refrigerate for about 30 minutes, serve and enjoy! I love adding olive oil on top of my hummus and serving with pita bread and every yummy vegetable I can scoop it with.
