Who doesn’t love coleslaw?!!
Well what if you could make your own type of coleslaw salad with a third of the calories, dairy free?
Oh, did I mention the preparation time is literally 2-5 minutes.
And you’ll feel super full afterwards?
It’s a dream come true, I know, so let’s get started asap!
Trader Joe’s, as most of you know, is one of my absolute fave grocery stores. The prices are unbeatable. The staff are all sooo helpful and friendly. And I’ve never had a bad bag of lettuce. Even Whole Foods gives me soggy, wilted greens in a bag every once in a while. 🙁
I am kind of lazy when it comes to lettuce. I WAYYYY PREFER to buy my lettuce pre packaged and cleaned, in a bag, waiting for me to rip it open and dump it in a bowl. I just do not have the time to clean and chop lettuce, ice it and make it all crispy.
And I bet most of you are hard working, busy peeps! Moms, wives, girlfriends, single, dating… we all seem to be way too busy to eat healthy all of the time. I hear this from my clients A LOT.
“Too busy to make a healthy meal” seems to be the most used excuse in the book these days.
Well, I am darned busy. I eat lunch in the car most days. And I food prep on a Sunday, for that exact reason, hoping my greens will last through the next Friday.
But we can’t let excuses get in the way. Where there’s a will there’s a way. RIGHT?
I’ve wasted a lot of leafy yummies because they just don’t last five days in olive oil. So that’s basically where I got the idea to try cabbage and kale instead. They just last longer. And heck, soaking kale and cabbage in oil or a light dressing for five days makes it taste better. The greens become softer and more digestible.
The best part? IT DOESN’T GO BAD.
Well, why don’t you try my cabbage salad and see what you think. Grab a stop watch, get set and GO!!!
These are the three bags I grab a ton of lately. (The new Kohlrabi blend is insanely yummy with beets.)
I always mix these three bags together because if you want to add the dressing that comes with the brocolli kale salad for your significant other (not vegan), you can do so and cut calories because you’ve added so many greens it makes way more salad.
If you’re doing it my preferred “vegan” way, then you toss the dressing and add extra virgin olive oil.
Regardless, I save the nut and dried blueberry packages for Anton’s trail mix. Too many calories when I want a lunch salad under 300 calories.
Soooo… if I am packing lunches for my work week, I start putting them into glass containers or the ones I recycle when clients gift me recipes and foods.
Once I’ve separated the salad into containers, I add a serving of tofu into each salad. This way I know exactly how many calories and how much protein I’m getting in each salad each day. I like to cut small pieces then I close the lid, shake it up and refrigerate.
Sounds easy and affordable, right? I think everyone’s busy schedule can totally handle this salad.
And if you’re a carnivore, add a serving of lean protein instead of tofu.
But please do try the tofu, it’s super yummy I promise!
So here’s a recap:
+ 1 bag TJ’s cabbage salad
+ 1 bag brocolli kale salad
+ 1 bag kohlrabi salad
+ extra virgin organic olive oil
+ TJ’s baked tofu (terryaki style is my favorite!)
*** Mix the three bags into a large bowl and drizzle olive oil. Toss and place in your lunch containers (3-5 easily). Add a serving of tofu in each container and enjoy over the week!
This cabbage salad really fills me up because it’s the perfect amount of fiber and protein. I can go hours teaching and working out if I eat one of my servings for lunch.
