One of my FAVE salads ever guys! Eating this salad will leave you feeling full, healthy and detoxified!
Today, I experimented with some of my favorite raw cashew nuts and nutrient rich, raw broccoli. Try this clean and simple recipe at home. It will stay fresh for a few days!
+ 1 cup cashews
+ 2 cups raw, organic broccoli
+ 1 cup sliced mushrooms
+ 2 cups organic persian cucumbers
+ 1 bag mixed greens (Trader Joe’s or Whole Foods has the best lettuce pre-made or you can try my lettuce recipe!)
+ 2 organic lemons (squeeze for lemon juice dressing as needed. You can slice and keep fresh in a ziplock bag for several days refrigerated)
+ 2 cups organic heirloom tomatoes (they should be gooey and juicy!)
I always set my lettuce in the bowl first and add the protein, nuts in this recipe, last. It’s just a funky habit I have. 🙂
When slicing the tomatoes, make sure your knife is sharp enough so that you don’t mush the tomato pieces. Juicy but fresh tomatoes are key so the lettuce stays fresh for a few days if you’re making a huge salad to savor throughout the work week like me.
Gently toss all ingredients and add lemon each time you serve yourself a bowl of this yummy salad. It’s an awesome detox meal… low calorie and delicious! Just watch how many cashews you take each serving- make sure you’ve “tossed” your salad! 😉
