These are some of my favorites and I’m not even a chocolate lover! In fact, I have an allergy to chocolate and can only have a tiny piece at a time. I’m not sure if it’s a curse or good fortune for me, LOL. A calorie saver for sure!
+ 1/2 c raw cacao
+ 1 c organic coconut milk
+ 2/3 c pure maple syrup
+ 1 c organic coconut flour
+ 1 tsp baking soda
+ 1/2 tsp sea salt
***Pre heat the oven to 350 degrees F, it’s kinda a must for all muffins! Mix your coconut milk and maple syrup. In a separate bowl add your raw cacao, coconut flour, baking soda and sea salt. Mix all the ingredients in one bowl together! Add more coconut milk if needed. Place muffin foil in each tin and pour the batter 3/4 of the way full. Place a large blackberry in the center of the batter of each muffin. Bake for 25-35 minutes (depends on your oven) and use my toothpick strategy to make sure they are all cooked through. Remove, cool and enjoy!
The blackberries give the cacao muffins an exotic taste! “Fancify” with a flower petal or two and serve as a healthy dessert for your dinner party!
