Well, here you have it. I’m that no nonsense, on the go 24/7 kind of working girl so for me to be in the kitchen every day… well, that’s just NOT going to happen.
EVER.
Sorry hubby. I love you and I cook for you… so here is one of the options.

Meet my Plant Paradox approved cabbage salad. For those of you wondering, I have been inspired by my latest healthy read, The Plant Paradox. READ IT. I promise it will change the way you eat and look at food. It’s a lifestyle change. NOT starvation. NOTHING difficult. You’ll feel better in a week. I know I did. And I continue to feel and look better and better.
Back to that cabbage salad! I was looking for something new and different that wouldn’t spoil if I made a bunch of it on a Sunday to be eaten Monday through Friday. Well, HELLO CABBAGE. The great thing about cabbage? It can be tossed in olive oil on a Sunday and still be fresh and tasty on the following Friday.
And it’s super duper filling. Like, I don’t need an afternoon snack until about 4pm.
The ingredients? Everything is ORGANIC. Nuts are SPROUTED. And it’s VEGAN. You can’t go wrong with that menu now can you?
My recipe:
1 head purple/red organic cabbage washed and chopped up
1 drizzling (as desired) Extra virgin olive oil
2 cups sprouted walnuts and sprouted pecans
1 tablespoon Egyptian dukkah spices (extra cumin please!)
1 pinch pink himalayan sea salt
*** Place cabbage in a bowl and drizzle your olive oil. Next add your spices and follow with nuts. Gently stir, place in your glass to-go containers for the week and you’re set! Makes 8-10 servings of large, yummy salads for the week.
Super low cal and sooo good for you. I never feel bloated afterwards!
