Let’s spice things up a bit with another healthy, yummy recipe of mine I’ve just concoted!
I’ve got another travel blog coming up on Venice Italy later this week. I’ve just been collecting my thoughts and thinking about the best parts of each place to show you all!
And I’m still waiting for wedding pictures! I’m dying to share wedding details with you all but please hang on a little longer, I promise we will get to those soon.
In the meantime… let’s talk about another of my simple, easy, healthy recipes!
I LOVE quinoa and salad mixed together! I mean, who doesn’t? Change things up a bit with this recipe twist on quinoa and your daily greens!
+ 1c greens (arugula or a spring mix are my favorites)
+ 1 hardboiled egg (cage free, organic) sliced
+ 1/4 c organic heirloom tomatoes cut in squares
+1/4 c sliced persian cucumbers
+ 1/4 c organic quinoa (Trader Joe’s tricolor quinoa is my fave!)
+ 1 small or 1/2 a small pepper (jalapeño or habanero, depending on how much heat you can handle 🙂
+ 1/4 c cilantro (less if you don’t like it as much as I do!)
+ 2 tablespoons extra virgin organic olive oil
*** I like to place my greens on the bottom of a small bowl. Next I add the cucumbers and tomatoes. The egg, quinoa and peppers come next. I place cilantro on top because it looks so pretty then add the olive oil and a pinch of himalayan pink sea salt- my fave! Stir gently and serve yourself! It makes a great post-workout meal! I always have lots of energy afterwards yet feel completely satiated.
*** Remember to use organic, cage free eggs! Trader Joe’s and Whole Foods are really good about explaining which chickens are raised in a pasture and which ones are not. Let’s show compassion, please!!!
