Ready to detox?!

I always feel super healthy when I eat ANYTHING with turmeric lol. I mean, my body must just really crave it.

Anyone else love this superfood?

If so, why not add it into most recipes? Especially a delicious, vegetarian cauliflower rice recipe. Turmeric adds a spicy “kick” to your “riceless” rice.

Oh and seriously… don’t be turned off by the “fried” verbiage because there’s absolutely NOTHING fried here! My cauliflower rice is healthy, delicious and super low cal!

+ 1 package cauliflower rice (Trader Joe’s has great raw cauliflower rice)

+ 10 small raw turmeric roots chopped

+ 2 large jalapeños (optional if you’re not into spicy)

+ 1 finely chopped sweet onion

+ 6 organic, cage free eggs

+ coconut oil

Heat your sauce pan on high and add coconut oil. First, grill your onion pieces for just under ten minutes. Next, add your jalapeños and cook on high another 4-5 minutes. Add cauliflower rice and turmeric, turning the heat level down to medium. I like to constantly watch my rice and stir so that all of the veggies get evenly cooked. The cook time is up to you. I prefer to undercook my veggies so they stay crunchy and retain more of their nutritional value so I’ll cook the rice for just under 7 minutes.

The last few minutes I add the eggs, quickly stirring the eggs throughout the pan so that your egg “protein” is evenly distributed. The eggs are a great source of protein and also give your rice that “fried” rice flavor! I seriously cannot tell the difference between my cauliflower fried rice and real fried rice.

The turmeric adds a super crunchy, healthy and savory flavor (spicy yet not hot spicy, just “flavorful spicy”). If you like spicy, the jalapeños give the rice a nice little “kick” to it!

** For a vegan option, add firm tofu instead of eggs.

My rice should make about 6 servings. I must admit, I probably eat 2 servings every time because it’s just so darn good and extremely low cal!
