I am sure we all snuck in a few cheat foods and drinks here and there, hahaha, so today I’m bringing you something fresh and healthy!
Quinoa is one of my favorite foods. It’s so easy to flavor or enjoy plain! It’s also a quick meal you can prep a lot of and place in your fridge for the week when you are on the go a ton and need to grab something healthy.
+ 2 c organic quinoa
+ 1 large spoonful coconut oil
+ 6-8 cups water (I like mine moist so I add extra water while cooking it)
+ 2 c cilantro
+ 4 organic persian cucumbers
+ extra virgin olive oil (drizzling size)
+ pink himalayan sea salt (at your discretion but not too much!)
Place the water and quinoa in a pot on high until it comes to a boil. Add the coconut oil and stir. Turn the heat down to low and let simmer for 10 plus minutes or until all the water is gone. Take a taste- if you want it more moist, add an extra cup of water and let it simmer for a few more minutes until the water is gone. When all the liquid is gone, scoop your quinoa into a large bowl and let cool. Wash all your veggies, chop and add into the quinoa. Stir in a drizzling of olive oil, a few shakes of sea salt and you are good to go! The cilantro makes it taste super yummy without adding any sauce.
