I’ve created the best, simplest, easy-to-make DETOX SALAD ever! Full of nutrients and anti-inflammatory ingredients, this salad also tastes yummy and takes literally five minutes to make!

+ 1 package mixed greens (Whole Foods or Trader Joe’s has great mixes)

+ 1 cup fresh turmeric

+ 3 sliced persian cucumbers

+ several mint stalks (I pile on the mint, it’s up to your discretion!)

+ 1 cup chopped celery

+ fresh squeezed lemon and olive oil

I love the pre packaged organic lettuce bags I can just open and throw into a large salad bowl! Next, I gather up my ingredients and start chopping. Be careful with the turmeric, it can color your nail polish and cutting board ladies- but it does wash off! You can add your chopped ingredients in any order. I prefer to make a gigantic salad that will last for 3-4 days because I’m so busy running around with my teaching and work! I place saran wrap over the bowl and refrigerate. When I’m hungry, I’ll scoop a bunch of salad into a smaller bowl, adding olive oil and fresh lemon. You will feel so clean and healthy after crunching down on one of these salads! I recommend trying it after a weekend of cheat foods. My Mondays and Tuesdays are now dedicated to eating clean, healthy, nutritious food that will give me tons of energy to get my week started right!

  • Trader Joe’s by the carrots, parsley and cilantro! But they don’t always carry it… I keep bugging them to carry it on a regular basis. I’ll send you a closeup photo- it’s the color of a potato on the outside but looks like a root! 🙂
