It’s watermelon season guys….
YAY!!!
I thought we’d take a break from our Italy travels and talk healthy. After all of that wine and pasta, I feel like we could use a rest!
Watermelon is packed with many of the essential vitamins and minerals we need on a daily basis.
I could eat a whole watermelon in one sitting… no joke. Granted, I look about 7 months pregnant afterwards, hahaha.
Maybe that’s why I decided to incorporate more than just “watermelon” into one yummy salad?…
This latest concotion of mine is refreshing, packed with protein and easy to make so TRY IT!!
+ 18 raw almonds
+ 1 c organic, seedless watermelon sliced in cubes (yellow watermelon tastes awesome)
+ 1/4 c freshly washed, organic cilantro
+ 1/4 c organic heirloom tomatoes
+ 1/2 avocado sliced in cubes
+ 1 tablespoon extra virgin olive oil
+ a sprinkle of pink himalayan sea salt
+ a sprinkle of freshly ground peppercorn
*** In a small bowl, add sliced watermelon, avocado, tomatoes, almonds and cilantro. Gently stir as you add a tablespoon of extra virgin olive oil. Sprinkle salt and pepper as desired. Eat and enjoy!
*** If you want to make a large bowl for a party or more servings to have on hand in the fridge, you can multiply my ingredients and add into a larger bowl as shown before! With this salad, I’m really not worried about calorie counting. It’s cool, healthy and delicious- perfect for summer!
