Let’s talk party food. 😉

When heading to a large BBQ or party in which the hosts have asked me to bring a dish, I always opt to make something healthy that I can enjoy. Why? Because lots of times these parties consist of well, “party” food. UGH. Unhealthy, processed foods loaded with preservatives and meats that I choose not to eat. Bringing a healthy salad of my own ensures that I won’t go hungry! It also gives the guests a great option if they want to join me in a lighter, lower calorie fare.

I made this salad for our friend’s pool party and it was a huge success.

First think of all the ingredients you want to incorporate. Try to be people friendly. Too many odd vegetables and the guests may steer clear. I also try to make my party food as pretty as possible.

People are attracted to pretty things, food included.

Finally… make a large enough portion so you don’t run out! And always, always, always, stick to olive oil dressing. People can add their own stuff later on if they want to.

Okay, here’s how I made my cucumber encircled salad:

+ 1 large bag of organic mixed greens and spinach as the bottom layer

+ 1 bag shredded organic carrots layered next

+ 1 bag almond cheese shreds on top of the carrots (or regular cheese if you prefer)

+ layer several organic, heirloom tomatoes of at least two colors

+ sprinkle mild peppers (1-2) for flavoring on top of your tomatoes

+ add basil for flavor around the outline of the salad dish and place your persian cucumbers on top (as many as needed to evenly outline your dish)

*** Wait to toss in olive oil until right before serving at your guest’s home and enjoy! This particular size platter could serve at least ten people.
