Serving shrimp cocktail at a dinner party but you know there’s at least one vegan guest? That’s OK! Try my yummy, creative, simple and easy to make vegan shrimp cocktail. It’s basically a super healthy, yummy salad in a margarita glass minus the shrimp!
+ a super fun margarita glass
+ a red, mild salsa
+ 1/2 cup mango jalapeño salsa
+ 1/2 an avocado
+ 1/2 cup chopped celery
+ several stalks cilantro
+ cold, firm tofu optional**
Layer the ingredients in a colorful pattern! I like to start with the red salsa at the bottom. Next I’ll add crunchy celery followed by avocado sliced in small squares. Layer your finely chopped mango-jalapeño salsa atop the avocado and finish with a sprinkle of cilantro stalks and/or pieces. If this is the main course, add some tofu in five slices and evenly place around the top of the glass to mimic a shrimp cocktail. This way your vegan guests get their protein intake for the evening too! Chill and serve!
