While I’m gorging on amazing food over here in Italy guys, partying it up and not doing my own cooking LOL… I thought I’d bring you a few super healthy, clean dishes with very little prep time for you and your guests! I’ll definitely need a month of post wedding “CRASH DIETING” when I return. And I’ll only be hosting super healthy dinners where I am in control hahahaha!

By now you guys probably know I HATE to cook when I’m hosting a dinner party. Try this super yummy, simple recipe that you can prep a few hours before your guests arrive. Or better yet, serve yourself without the hassle of stovetop cooking!
+ 5 large cooked shrimp (at a very reputable fish market)
+ 1/4 cup chopped celery
+ 1/4 cup chopped mango and jalapeño salad
+ 1/2 avocado sliced into small square pieces
+ 1/8 cup red mild salsa (Trader Joe’s has an awesome pineapple salsa I use all the time)
+ several stalks cilantro
I was at Crate and Barrel one afternoon going crazy trying to find a proper shrimp cocktail glass. Of course they were out! So I got creative and decided a colorful margarita glass would do the job and probably look way better! Obviously I think it turned out amazing! Any opinions??
I love to layer the ingredients… it just looks so pretty! And stacking different colors next to each other is a must! Start by adding mild salsa to the bottom of the glass. Place the chopped celery on top. Layer with small slices of avocado. Next, add your mango, jalapeño salad. Add your cilantro at the top for a pretty look. Place your shrimp evenly around the glass (odd numbers in flowers and cooking are always better :)). Serve yourself and enjoy! Or if you’re having a dinner party, place saran wrap over each shrimp cocktail and place in the refrigerator. Pull out and serve once your guests are seated. Enjoy!
*** For a vegan option, add everything but the shrimp! You could even top with tofu if you wanted to or leave as is.
